Chocolate Muffins




INGREDIENTS


  • 1 Cup of Butter (room temperature)

  • 2 1/2 Cups granulated sugar

  • 4 Large eggs

  • 1 Cup cocoa powder

  • 2 3/4 Cups flour

  • 1 1/2 tsp baking soda

  • 2 tsp paking powder

  • 1 tsp salt


HOW TO

  1. Pre-heat oven to 180 degrees celsius

  2. Sift flour, baking powder, baking soda and salt in a bowl.

  3. In a bowl put cocos powder and add 2 cups boiling water and whisk until smooth. Set aside and let cool slightly .

  4. In a separate bowl cream butter and sugar.

  5. Add eggs to butter mixing well after every 2 eggs until all 4 eggs are added and well combined. Do not over mix.

  6. Alternately add dry ingredients and cocoa mixture to the butter and egg mixture until the batter is well combined and smooth.

  7. Bake for approximately 30 minutes, let cool and enjoy.


Yealds about 24 cupcakes
