Red Velvet Cupcakes



INGREDIENTS


  • 1 Cup butter

  • 1/3 Cup oil

  • 3 Cups sugar

  • 1/2 Tbsp vanilla essence

  • 4 eggs

  • 1 Tbsp red coloring

  • 4 Cups flour

  • 1/2 tsp salt

  • 2 Cups buttermilk or (2 cups milk with 2 tsp white vinegar)

  • 1/2 Tbsp + 1/2 tsp Apple cider vinegar

  • 1/2 Tbsp + 1/2 tsp baking soda


HOW TO


  1. Pre-heat oven to 180 degrees celsius

  2. Sift flour and salt into a bowl and whisk then set aside.

  3. Cream butter, oil, sugar and vanilla until well combined.

  4. Add food coloring and beat until mixture is evenly colored.

  5. Add eggs, 2 at a time until all eggs are added and well combined.

  6. Add flour mixture alternating with buttermilk to butter mixture and mix until well combined. Don't over mix.

  7. In a small cup, combine baking soda and vinegar, while mixing with one hand, immediately add mixture to batter. Beat for 10 seconds.

  8. Bake for approximately 45 minutes.



Yealds about 24 cupcakes
