Red Velvet Cupcakes

INGREDIENTS
1 Cup butter
1/3 Cup oil
3 Cups sugar
1/2 Tbsp vanilla essence
4 eggs
1 Tbsp red coloring
4 Cups flour
1/2 tsp salt
2 Cups buttermilk or (2 cups milk with 2 tsp white vinegar)
1/2 Tbsp + 1/2 tsp Apple cider vinegar
1/2 Tbsp + 1/2 tsp baking soda
HOW TO
Pre-heat oven to 180 degrees celsius
Sift flour and salt into a bowl and whisk then set aside.
Cream butter, oil, sugar and vanilla until well combined.
Add food coloring and beat until mixture is evenly colored.
Add eggs, 2 at a time until all eggs are added and well combined.
Add flour mixture alternating with buttermilk to butter mixture and mix until well combined. Don't over mix.
In a small cup, combine baking soda and vinegar, while mixing with one hand, immediately add mixture to batter. Beat for 10 seconds.
Bake for approximately 45 minutes.
Yealds about 24 cupcakes
